Keep Mum happy with our delicious Gin and lime loaf cake!

There’s nothing like a thick slice of homemade cake to keep a special mum happy. This easy recipe combines a few of our favourite ingredients, namely fruit, herbs and gin, and we think she’ll love it!

175g soft butter

175g caster sugar

3 eggs, beaten

Zest of two limes

100g self-raising flour

75g ground almonds

1-2 tbsp milk

150g icing sugar

1 tbsp lime juice

1 tbsp gin

4 peppermint leaves, finely chopped


Pre-heat the oven to 170C/150C fan and grease and line a 2lb loaf tin.

Beat the butter and caster sugar together until light and fluffy.

Gradually beat in the eggs.

Add half of the lime zest and stir.

Stir the flour in to the mixture, followed by the almonds.

Add 1-2 tablespoons of milk until the cake batter is wet enough to fall off a spoon, then pour it into the prepared tin and smooth the top.

Bake for 50-60 minutes, until a cake tester comes out clean. Leave to cool in the tin.

Mix the remaining lime zest with the icing sugar, juice, gin and chopped peppermint leaves. Add a little more gin if the icing is too stiff. Pour over the cake and decorate with extra chopped mint. Allow to set before serving.
