Homemade chilli oil for red hot lovers!

Happy chilli plants can be very prolific, so if you find yourself with a big pile of these feisty little peppers, it’s worth drying any surplus. One of our favourite uses for dried chilli is this infused oil, which is ideal for everything from creating super spicy stir-fries to drizzling over homemade pizzas.

This recipe makes 500ml of hot chilli oil. You will need a clean, sterilised bottle.


500ml everyday olive oil

40g dried chilli flakes

4 dried red chillies

Pour the olive oil into a small saucepan and warm gently without allowing it to bubble or smoke. Tip in the chilli flakes and the whole chillies and warm for 4 minutes. Remove from the heat and allow to cool.

Pour the oil and chillies into a sterilized bottle and seal. Allow to infuse overnight before using. If you prefer your oil a little less fiery, strain out the chilli flakes and return the oil to the bottle. Return the whole chillies back to the bottle and seal.
