The Head Gardener’s Vin D’Orange, our favourite summer tipple!

This is absolutely summer in a bottle! Gorgeous citrus tones, a deep marmalade hue, and a feisty alcoholic kick recipe makes this our favourite hot-weather tipple! Ned’s recipe makes approximately 1.3 litres. You will need a large sealable sterilised jar.
20 calamondin oranges, washed
½ lemon
200g sugar
2 cinnamon sticks, bruised
1 litre rose wine
200ml eau-de-vie
60ml rum
Halve the Calamondin oranges horizontally and place in the jar with the lemon, sugar, cinnamon, rose wine and eau-de-vie. Close the jar and place in the fridge for six weeks, shaking regularly to ensure the sugar has dissolved.
Remove from the fridge, add the rum and stir. Strain through a paper filter or muslin cloth into a sterilised bottle. Seal the bottle and keep refrigerated.
